Bicol Express

Bicol Express got its name after the train that piles the Manila-Naga route. Since the dish’s name has “Bicol” in it, it is commonly assumed that he dish originated in Bicol.

Bicol Express! This is a well-known comfort food here in the Philippines. Bicol express contains pork cube cooked in coconut milk, and chili peppers. The rich, creamy, spicy, and delicious taste of the dish gives it its wholesome flavor.

One thing I have learned from eating Bicol Express is that SPICE is NOT a joke. My dad used to say to me “if it doesn’t make your tongue go numb, then there’s something wrong with the dish.” I could most probably describe it as a CHILI EXPLOSION. My first time trying bicol express was a complete disaster for me. I was drenched in my own sweat, crying my eyes out from how spicy it was. Now, this may only occur to me as I do not favor spicy foods. But if you love like REALLY LOVE spicy foods, I’d recommend you to try this one.

Bicol express is known to be “wake-up call” or as we call it “pampagising” because of its high spicy level. However, although I am not fond of spicy foods, bicol express is a dish that I won’t ever want to miss out eating. Trust me, the first bite hurts, but as you continue to eat it, it gets better and better and delicious. Spice is the key to this dish.

So to all you spice lovers, bicol express is my top recommendation.
